As the weather gets colder, I am craving all of the comfort food.
And this Potato Bacon and Corn Chowder is really hitting the spot these days.
I am pretty obsessed with making chowder.
Actually, I am obsessed with making my Leftover Chicken Corn Chowder. I have leftover chicken in my house on a fairly regular basis, so I make that one over and over again. And that is rare for a food blogger.
But now that I’ve made this Potato Bacon and Corn Chowder? I think this one might be my go-to these days.
What do you need to make this Potato Bacon and Corn Chowder?
For me, this is basically my pantry essentials. Plus bacon. But then again, I do usually have bacon in the house. All you need is:
- butter
- onions
- garlic
- flour
- chicken broth
- potatoes
- cheese
- whipping cream
- frozen corn
- bacon
That’s it!
Any time I can add potatoes to a soup, I will. I love how hearty and filling it makes the soup. Plus I always buy it in bulk, so I always have some on hand.
I know that I am going to be making this recipe on repeat after I give birth. I will need some major comfort food, and this Potato Bacon and Corn Chowder fits the bill!

Potato Bacon and Corn Chowder
Ingredients
- 3 Tbsp salted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 Tbsp all-purpose flour
- 4 cups chicken broth
- 4 medium russet potatoes, peeled and cut into 1 inch cubes
- 2 cups cheddar cheese, shredded
- 1/4 cup whipping cream
- 4 cups frozen corn
- 1/2 cup cooked bacon bits
- salt and pepper to taste
Instructions
- In a large saucepan, melt the butter over medium heat. Cook the onion and garlic until fragrant, around 3 minutes. Mix in the flour and cook for a minute, continuously stirring.
- Mix in the chicken broth and potatoes and bring to a boil. Reduce heat and allow to simmer, stirring occasionally. Cook until potatoes are tender.
- Mix in the whipping cream. Add in the cheese and stir until melted. Mix in the corn and half of the bacon. Allow to simmer until the corn is heated through, around 4 minutes.
- Ladle into bowls and top with additional bacon and cheese if desired.
