Well, I definitely missed pie day. No pies around these parts.

And as a math teacher, I really should have no excuse.

But, here's some Pecan Pie Squares only 2 weeks too late. Doesn't even look like pie. But it's always the thought that counts, right?

What you need to make Pecan Pie Squares

Surprisingly very little ingredients are required here. And you don't even need corn syrup! All you need is:

  • butter
  • brown sugar
  • powdered sugar
  • flour
  • pecans
  • eggs
  • vanilla extract

That's it!

Freezing and Storage

These bars freeze beautifully. All you need to do is cut them into squares, then transfer them to a large freezer bag. Make sure you remove as much air as possible from the bag before you place it in the freezer.

They can be stored in the freezer for up to 3 months.

I usually store these Pecan Pie Squares in the fridge for up to 7 days, but they can also be stored at room temperature in an airtight container for up to 5 days.

Ingredients

Shortbread Crust

  • ¾ cup salted butter, softened
  • cup brown sugar, packed
  • cup powdered sugar
  • 1 ½ cups all-purpose flour
  • ¾ cup finely chopped pecans

Pie Filling

  • 2 large eggs
  • 1 ½ cups brown sugar
  • 1 tablespoon unsalted butter
  • 2 teaspoon vanilla extract
  • 2 cups chopped pecans

Instructions

  • Preheat the oven to 350°F. Line a 9 inch square baking pan with parchment paper. Set aside.
  • In the bowl of a stand mixer, beat the butter until light and fluffy. Mix in the sugars, beating until smooth. Slowly add in the flour and mix until just combined. Fold in the pecans.
  • Press the crust mixture onto the prepared baking pan, and bake in the preheated oven for 12 minutes.
  • Meanwhile, in a medium bowl, whisk the eggs. Add in the remaining filling ingredients and mix until fully combined.
  • Pour the filling over the baked crust and bake for 25 minutes.
  • Remove from the oven and allow to cool completely.
  • Cut into 16 squares and enjoy.

    I love peacan pie, so these would be a great alternative, however very dangerous as a hand held treat. Love the flavors and my mouth is already imagining the buttery caramelized flavor. 😋 Grwat that you can freeze them. Make a huge batch so always have some on gand!
