Have you ever done a long distance relationship? Because me and John are starting off our first year of marriage on the opposite sides of Canada, and it is a lot harder than I thought it would be.
That is also considering the fact that we have done long distance for 2 years in the past. Maybe marriage really does change things.
But lucky for me, John is flying over here tomorrow to stay for a week. The only reason he is flying over in the first place is for his PhD Convocation, but he will stay for a little longer so that we can spend at least SOME time together during our first year or marriage.
Now I need to pretend that I keep the house clean and DON’T lounge around in my pajamas all day long on a regular basis. Also, I am thinking of making enough cupcakes and cookies so that he will want to stay longer.
If these Honey Cupcakes with Honey Frosting don’t do the trick, I don’t know what will.
One of the ingredients in these cupcakes that I am OBSESSING over is the honey.

I gave some of these cupcakes to my students last week, and they were very surprised by how good they were. They told me that they never had a honey cupcake before, but they also said this tasted a lot better than any honey that they have tried in the past.

Honey Cupcakes with Honey Frosting
Ingredients
Cupcakes
- 1/2 cup milk
- 2 tsp white vinegar
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/4 cup honey
- 1 tsp vanilla extract
Frosting
- 1/2 cup unsalted butter, softened
- 1/4 cup cream cheese, softened
- 2 cups icing sugar
- 1/4 cup honey
Instructions
- Preheat the oven to 350°F. Line a muffin pan with paper liners and set aside.
- In a small bowl, mix together the milk and vinegar. Set aside to "sour".
- In a medium bowl, mix together the flour, baking powder and salt. Set aside.
- In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, mixing after every addition. Mix in the honey, vanilla and "soured" milk.
- Slowly add in the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop the batter evenly in the prepared muffin pans, filling until around 3/4 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.
- Allow the cupcakes to cool in the pan for 5 minutes, then transfer to wire racks to cool completely.
- In the bowl of a stand mixer, cream together the butter and cream cheese. Mix in the icing sugar and honey.
- Pipe the frosting on the cooled cupcakes.
I love the look of these & forgive my ignorance but what is a honey shot? Is it just drizzled honey or do you add something to it?

Hi, I am making this for a school cupcake competition. Would you say that the cake from this recipe with honey buttercream is too much honey flavor? I didn’t think that it was, but the people in my group keep saying it’d be too overpowering… It’d be nice to have another opinion.
Personally I don’t think so, but then again I really like honey haha. I think it really depends on what honey you are using!
Hi, what if all I have is distilled white vinegar? Is that ok? I know you say it to curdle the milk..I have lemons if that is more preferable.
