You know when someone says “I think he/she is the one”? Oh wait, you don’t live in a cheesy romantic movie? Well I might live in a cheesy (or sugary) food romantic movie, because I really think that this oatmeal is the one.
Even though it’s another nectarine recipe, I promise I will be going full blown pumpkin soon. Just you wait. But right now, I am crushing on the stone fruit. (Did you know the actual word for stone fruit is a drupe? I learn something new every day!)
Even though I have been pretty much obsessed with oatmeal for the past month, my boyfriend is not joining in on my obsession. Sure, he will eat it if I have just baked it and put him in front of his face, but most days, I leave before he even wakes up. And since he bought a lot of candy for Halloween, (seriously, I don’t even want to think about all of the candy I ate) he prefers to eat candy for breakfast than the leftover baked oatmeal that I made the day before.
But this one changed his mind! I almost didn’t want him to eat the leftovers because I wanted it all to myself. It was seriously that good.
This oatmeal is long gone now, but looking at these pictures makes me wish I had some left over. Maybe next time I make it I will create a stash in the back of my fridge. For times like this.
How would I describe this oatmeal? I think I would say that it’s like a gingerbread cookie meets my upside down nectarine cake meets an oatmeal cookie. Just all kinds of yummy.
And I know that I made some baked nectarine oatmeal last week, but I am loving this one waaaayy more. Not that last week’s oatmeal wasn’t great. It’s just that this one is unreal.
This recipe is my snail-like transition from summer into fall. But now that I have discovered this new way to eat oatmeal, I don’t think I want to try anything else.

I tried my first baked oatmeal in college and even though it was college cafeteria food…I still enjoyed it. So, I made my own and love it even more. I made baked oatmeal with nectarine before and love it!! It`s great that you added that ginger spice to it!
I love baked oatmeal – even as leftovers it's always so hearty and delicious! Ginger and nectarine sound like a perfect match too!
Healthy and yummy. Great recipe. I would love to try this. 🙂
I love nectarines as well and this baked oatmeal looks amazing!
Ginger sounds very nice with nectarine. I bet the aroma would be so tempting. What a great way to start the morning!
This looks pretty good though I am not too fond of ginger in bakes 🙂
Mmmm this looks fantastic Cathleen! I remember the first time I had baked oatmeal, and it was like having cake for breakfast – totally legit! Pairing nectarine and ginger is such a good idea 😀 No wonder your boyfriend had to give in to this one ^ ^
This is something my husband will love for his breakfast too. It looks seriously good!
That sounds delish! Love the addition of ginger, that is one of my favorite flavors. I'm sure it's a wonderful way to start the day 🙂
Hi Cathleen, looks so yummy ! I'm introducing baked oatmeal to my family too … Bookmarked this !
