I feel like I have eaten my weight in chocolate this holiday season. And then some.
But somehow, I am not sick of chocolate just yet. Especially not in these Crispy Chocolate Chunk Cream Cheese Cookies. These might be some of my favourite cookie recipes to date.
What you need to make Crispy Chocolate Chunk Cream Cheese Cookies
I always have almost all of the ingredients already in my pantry. All you need is:
- flour
- baking powder
- salt
- Rice Krispies
- butter
- cream cheese
- sugar
- chocolate chunks
Variations and Substitutions
If you don’t have chocolate chunks, any kind of chocolate chips would work here as mix-ins. Or a nut or dried fruit. Really, this recipe is so versatile, it works well with anything you can think of mixing in.
I have also made this recipe vegan for some of my vegan students and it was a hit! All you need to do is replace the butter and cream cheese for vegan butter and vegan cream cheese, and make sure you buy some vegan chocolate chips. It doesn’t taste any worse, and it’s great because anyone can eat them!

Crispy Chocolate Chunk Cream Cheese Cookies
Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 cups Rice Krispies
- 1/2 cup salted butter, softened
- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 1 1/2 cups chocolate chunks
Instructions
- Preheat the oven to 350°F. Line a cookie sheet with parchment paper and set aside.
- In a large bowl, mix together the flour, baking powder, salt and Rice Krispies. Set aside.
- In the bowl of a stand mixer, cream together the butter, cream cheese and sugar until light and fluffy.
- Slowly mix in the Rice Krispies mixture. Fold in the chocolate chunks.
- Using a medium cookie scoop, scoop the cookie dough onto the prepared baking sheet. Press the cookies down with the bottom of a glass to flatten slightly.
- Bake in the preheated oven for 8-10 minutes. Allow to cool completely on the baking sheet.
These cookies are so good! It’s a fun recipe and great way to use up stale or leftover rice crispies. Loved it.
