This Leftover Turkey Tetrazzini is a great recipe to use up any turkey leftovers that you have over Thanksgiving or Christmas.

I know that it is Black Friday, but all I am thinking about is all of the recipes I can make with my leftover turkey.
This year I made a whole turkey, and since there was only me, my husband, and my two children both under the age of 3, there is plenty of leftover turkey. So of course, I needed to think of a leftover recipe that the whole family will love.
I knew I wanted to make a turkey casserole, just because I wanted something quick to make so that I can enjoy my holiday with my kids. So this Leftover Turkey Tetrazzini was made after a quick Google search of simple recipe ideas using leftover turkey. And I think that this might be my favorite recipe so far for using up extra turkey.

What is Tetrazzini?
Tetrazzini is a dish invented in the early 1900s, and was named the Italian opera singer Luisa Tetrazzini. It is a baked pasta dish made with poultry or seafood. Oftentimes the creamy sauce is flavored with white wine.
Leftover Turkey Tetrazzini Ingredients
You basically only need pantry essentials to make this easy turkey tetrazzini recipe. All you need is:
- spaghetti noodles
- salted butter
- all purpose flour
- low sodium chicken broth or chicken stock
- milk
- Parmesan cheese
- oil
- yellow or white onion
- sweet peas
- turkey leftovers (both turkey breast and dark meat)

Tips
Swap out the turkey. Instead of the roast turkey, you could make Chicken Tetrazzini with rotisserie chicken. You could even experiment with seafood versions by swapping the turkey for shrimp or salmon.
Make a crunchy topping. Top the homemade turkey tetrazzini with Panko breadcrumbs, or make your own bread crumbs! To make your own breadcrumb topping, place some white bread on a baking sheet, and cook in the oven at 300℉ for 15 minutes. Then place the dry bread in a food processor, and process until you have fine crumbs.
Add some spice! To add more flavor, try mixing in some ground black pepper, garlic powder, onion powder, or whatever spices you like!
Try another noodle. I love spaghetti, but you could also use egg noodles, linguine or fettuccini.

Leftover Turkey Tetrazzini
Ingredients
- 1 lb dry spaghetti
- 1/2 cup salted butter
- 1/2 cup all purpose flour
- 3 cups chicken broth
- 1 cups milk
- 1 1/3 cups grated parmesan cheese
- 2 Tbsp oil
- 1 medium onion
- 2/3 cup green peas
- 4 cups cooked turkey diced
Instructions
- Preheat the oven to 350℉.
- In a large salted pot of water, cook the spaghetti according to package instructions. Place in a deep 9x13 inch casserole dish.
- Meanwhile, in a medium saucepan, melt the butter. Mix in the flour until combined. Add in the chicken broth and milk, and mix until fully incorporated. Bring to a boil, then mix in the Parmesan cheese until melted. Remove from heat.
- In a large saucepan, heat the oil. Sauté the onion for around 2 minutes, then add the green peas and turkey. Cook until warm.
- Top the spaghetti with the turkey mixture, then the cheese sauce. Using tongs, mix the ingredients until the spaghetti is fully coated in sauce.
- Place in the preheated oven for around 1 hour, or until the casserole is bubbling.
