But for some reason, Mondays always make me crave comfort food. So let's make some, shall we?

This Cauliflower Ground Beef Skillet might be a recipe that will be going on repeat for the next couple of days. It's seriously so easy to make! All you need is:

  • olive oil
  • cauliflower
  • salt and pepper
  • ground beef
  • garlic
  • tomato paste
  • heavy cream
  • cheddar cheese

That's it!

Lately, I have been buying a lot of cauliflower which is totally out of the ordinary for me. 

For some reason, I thought I hated cauliflower. That is, until I made my Roasted Turmeric Cauliflower. Now all of a sudden I can't get enough cauliflower.

And this combo of cauliflower and ground beef makes a great quick and easy weeknight meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium head of cauliflower, chopped
  • salt and pepper to taste
  • ¼ cup water
  • 1 lb ground beef
  • 3 cloves garlic, minced
  • 2 tablespoon tomato paste
  • ¼ cup heavy cream
  • 1 ¼ cup shredded cheddar cheese, divided

Instructions

  • Preheat the oven to 400˚F.
  • In a cast iron skillet, heat the oil. Add in the cauliflower and season with salt and pepper. Cook until the cauliflower begins to brown.
  • Pour the water over the cauliflower. Cover and cook until the cauliflower is tender, around 3-4 minutes. Transfer to a plate and set aside.
  • In the same skillet, cook the ground beef until no longer pink, around 5-7 minutes. Drain the ground beef and return to skillet.
  • Mix in the garlic, tomato paste, heavy cream and ¼ cup cheddar until cheese is melted.
  • Add the cauliflower on top and top with the remaining cheese.
  • Transfer the skillet to the oven and cook until the cheese is just melted, around 5 minutes.

    I didn't know what to make with cauliflower tonight and I saw this recipe when I googled cauliflower and saw cauliflower and ground beed. It ws delicious, I used plain greek yogurt and didn't have tomato paste so use catsup. I also grilled onions and 3 large green peppers to serve on the side. Delicious!! and easy. Thank you

    It was nice that it was a quick, one dish meal. But it needed more sauciness to it...was kinda dry and a little bland. If I was to make it again, I would make alot of additions to improve it and make more flavourful.

    It was good. Didn’t have any sour cream, so I used plain Greek yogurt which is better for me anyway😬 Added Italian seasoning and I’m trying to restrain myself from eating the entire skillet. Definitely making it again!

  4. Made this tonight as I had a head of fresh cauliflower to use up. Loved it! Fast and tasty. I did double the amount of cream as I didn’t have enough in the pan to melt the cheese and make enough sauce. Will definitely make this again and probably add in mushrooms.
