Easy Summer Squash and Lemon Quinoa recipe. A quick and simple light dinner idea, it also works well as a gluten free side dish.
Summer means I am making the most of the seasonal produce. And right now, summer squash is at the top of my list!
My husband asked me what the difference between a summer squash and a zucchini was. Honestly, I had no idea. Doing a quick google search, it seems like zucchini is a type of summer squash.
So there you have it. This recipe is already looking extremely versatile.
This Summer Squash and Lemon Quinoa recipe tastes like summer in a bowl.
You have your summer squash. You have your lemon. And you also do not need to turn on your oven.
I am in love with everything about this recipe this summer.
All you need to make this recipe is:
- oil
- summer squash
- quinoa
- lemon
- dill
- parmesan
That’s it!!
I realized that I had a lot of quinoa in my pantry, so I have been making my Chicken, Broccoli and Quinoa Casserole a lot lately.
But now that it’s getting so hot, I rarely want to turn on my oven. So you can bet that this recipe is going to be on a regular rotation around here!

Summer Squash and Lemon Quinoa
Ingredients
- 1 Tbsp olive oil
- 1 medium summer squash, diced
- 2 1/2 cups water
- 1 1/4 cup quinoa
- 1/4 tsp salt
- juice of 1 medium lemon
- zest of 1 medium lemon
- 1 Tbsp dried dill
- 1/4 cup Parmesan, grated
Instructions
- In a medium skillet, heat the oil over medium heat. Cook the summer squash until lightly browned on both sides. Pour onto a plate and set aside.
- In the same saucepan, mix together the water, quinoa and salt. Bring to a boil and reduce to low and allow to simmer for around 15 minutes.
- Mix in the lemon juice, lemon zest, dill and Parmesan. Serve immediately.
