I’m kind of obsessing over here. Especially since I can never have enough chocolate and peanut butter recipes up on this blog. And I hope I never stop producing them.
But since ’tis the season for no bake recipes. I don’t remember the last time I turned on my oven. And I’m not even sad about it.
These fudge bars sort of remind me of those oat fudge bars from Starbucks, but around 100x better because, hello? Peanut butter is involved!
I am sure this will taste just as good with any other type of nut butter, but I have been craving peanut butter all year. The summer is almost the only time I can eat peanut butter because I work in a nut free school.
And as I have around half a cupboard dedicated to different types of peanut butter, I think I better use as much of it as I can before the summer ends.
These bars are ridiculously easy to make: you only need 6 ingredients, and I am almost positive that you already have them all in your pantry.
Plus, you get all the deliciousness of fudge without all of the junk ingredients that you would usually find in your regular fudge. In fact, this is vegan and gluten free. No sweetened condensed milk in here. The fudge layer is made of only two ingredients: chocolate and peanut butter.
So basically my two favourite ingredients.
I sweetened these bars with pure maple syrup because, duh. I’m Canadian, and we basically drink the stuff, am I right?
…okay jokes. Total stereotype and totally false. It was just Canada Day and the stuff was on super sale in the stores. So I needed to fill my cart, because even though I live in Canada, pure maple syrup is expensive!
But anyways, you can sub in honey or agave syrup.. whatever you have on hand really. I won’t judge!
But if you plan to share, make sure you make two batches. Mine were gone far too quickly, and I barely got any. Next time I will have to hide it in the back of my fridge. When they are this good, it is really hard to share.
No bake peanut butter and chocolate oat fudge bars. Ready in 15 minutes, these make a great quick and easy snack or dessert idea.
- 2 3/4 cup quick oats
- 1/2 cup pure maple syrup
- 1/4 cup natural peanut butter
- 1/2 tsp salt
- 1 Tbsp water
- 1 tsp vanilla extract
- 1/2 cup creamy peanut butter
- 4.5-5 oz chocolate chips
Line an 8x8 square pan with parchment paper. Set aside.
In a medium bowl, mix together the oat layer ingredients until fully combined. Pour half of the oat mixture into the prepared pan.
Place the fudge layer ingredients in a microwave safe bowl. Heat in the microwave for 1 minute, stopping to mix after 30 seconds.
Pour the chocolate mixture on top of the oat mixture. Sprinkle the remaining oat mixture on top of the chocolate layer and press down with the back of a spoon.
Place the mixture in the fridge to harden for around 4 hours, then cut into squares.
