Are you craving Mac and Cheese? But without the Mac? (So just cheese?)
But seriously, I am LOVING this quinoa dish. It mimics your regular Mac and Cheese without feeling like you need to go to the gym the next day, and loaded with other vegetables everyone has lying around the house. I think I could even eat the whole batch in one sitting. I mean, come on. Cheese, broccoli, onions and quinoa? I think I am in food heaven with all of my kitchen staples.
This dish comes together in less than 30 minutes, so coming home really late and stressing about what to make for dinner is a thing of the past!
I have been making this at least once a month for the past year, and I am wondering why I have never posted a recipe for it. Maybe I assumed it was just so easy that people would have thought of it on their own. And many of you probably did, but for those who are new to quinoa or have not experimented with it other than adding it maybe in salad, a burger or maybe even breakfast porridge, this should be your next step.

Cheesy Onion and Broccoli Quinoa
What you'll need:
- 1 3/4 cups vegetable broth
- 1 cup quinoa
- 1/2 cup diced onion
- 1 clove garlic, minced
- 2 cups chopped broccoli
- 1 cup shredded Cheddar cheese
- salt and pepper to taste
- Heat the vegetable broth, quinoa, onion and garlic on medium heat and bring to a boil. Once boiling, reduce the heat to medium low, cover, and let simmer for 10 minutes. Place the broccoli in the pan and allow to simmer for another 5 minutes, or until the liquid is completely absorbed.
- Remove from heat and stir in the cheese. Cover and set aside to let the cheese melt, around 2-3 minutes. Season with salt and pepper.
