It seems as though the only time I can make food is in the morning or very late at night. I LOVE late night baking, but in the morning, I like something quick and easy. That can just put together, like, BAM. Done. I guess this is why cereal is so popular. But my house looks like a cereal warehouse, so I am quite bored of that every morning. So I’ve decided to switch it up.
This is a great use of leftover chicken. (If I need a quick, easy dinner, I just go to Safeway and pick up a barbequed chicken. There is no way to eat all of that, so I need to find a way to use it somehow.) I have also realized a new love for spinach. I thought that this might be a weird combination, but it was actually really good!
Hmm. My “Breakfast” bubble is getting pretty large. I should probably start making some other meals, switch it up. I guess it’s because breakfast is the only meal that I eat at home.
What you’ll need:
-2 tablespoons oil
-1 tablespoon milk
-6 spinach leaves
-1/4 cup cooked chicken
-3 slices of cheese
-2 tablespoons salsa
1. In a small bowl, beat the egg. Add some seasoning salt (to your preference) and the milk and mix well.
2. Heat the oil on a skillet on medium heat, and pour the egg onto it, mixing it up as though making scrambled eggs
3. Place cheese, chicken, spinach, prepared egg, and salsa in the wrap. Roll up, and enjoy!
