These Rice Krispie Buckeyes are the perfect dessert to make if you want a super simple no bake tasty treat that is ready in no time.

Ever since someone introduced me to Buckeyes a couple of years ago, I have been obsessed with making them! I have made so many variations, because they have quickly become my favorite candy to make around the holiday season. And even though it is almost a year until I get to make my Christmas cookie trays again, I still want to make Buckeyes year round. So I made these Rice Krispie Buckeyes a couple of weeks ago for the first time, and my husband said that this version is the best Buckeyes variation that I have made.
The no bake peanut butter balls filled with Rice Krispies give a little extra texture that I feel like the traditional peanut butter balls lack. Even though on these cold days I want to turn on the oven at all times of the day to warm up the house, this no bake dessert is so good that I made the exception to make these. I promise you if you make them, they will become your new favorite treat.

Rice Krispie Buckeyes Ingredients
You only need a handful of ingredients to make these crunchy Buckeyes. All you need is:
- creamy peanut butter
- unsalted butter
- powdered sugar
- vanilla extract
- Rice Krispie cereal
- semi-sweet chocolate chips
- coconut oil

Tips
Storage: Store the Buckeyes in an airtight container in the fridge for up to 2 weeks. I would not recommend storing at room temperature, as chocolate melts if it gets too warm. It also contains butter, which means that the balls will get too soft if it gets too warm.
Use a different kind of melted chocolate for the chocolate shell. Instead of semi sweet, try using milk chocolate, dark chocolate or white chocolate if you wanted it sweeter.
Replace the peanut butter. Try some variations! I love cashew or almond butter for a slight twist. However, I would avoid using natural peanut butter as that would make the mixture too wet.

Rice Krispie Buckeyes
Ingredients
- 1 cup creamy peanut butter
- 3 Tbsp unsalted butter softened
- 1 1/2 cups powdered sugar
- 1/2 tsp vanilla extract
- 1 1/4 cup Rice Krispies cereal
- 1 1/4 cup chocolate chips
- 1 Tbsp coconut oil
Instructions
- In a medium bowl, cream together the peanut butter and butter until smooth. Mix in the powdered sugar and vanilla until fully incorporated.
- Add in the Rice Krispies and gently mix in by hand until uniformly distributed.
- Line a baking sheet with wax paper or parchment paper. Using a medium cookie scoop, scoop the peanut butter mixture onto the prepared baking sheet and place in the freezer for around 30 minutes.
- Remove from the freezer and roll into balls. Return to the freezer until they have hardened.
- In a small microwave safe bowl, microwave the chocolate chips and coconut oil in 30 second intervals, mixing until smooth.
- Place a toothpick into a frozen peanut butter ball. Dip into the melted chocolate. Return to the baking sheet and remove the toothpick. Using a butter knife, smooth the toothpick mark off.
- Allow the chocolate to harden before eating, either at room temperature or in the fridge.
