New Years Eve. And all I want is Christmas food.
Plus, I have a bowl full of candy canes to use up. Who says you can’t eat candy canes for breakfast?
Okay, my parents have definitely told me not to eat candy for breakfast. But it’s a holiday, right? I can let the rules slide just this once.
So do any of you out there have New Years resolutions? I would like to say exercise and eating better, but that’s a little too cliche, right?
On top of it being too cliche, it means that all the gyms will be packed with people all of January. And there is no way I am running in snowy Toronto. I can barely walk in it without tripping.
So I guess it will be just the eating healthier portion of my resolution until January. Let’s see how long this will last.
Honestly, this Peppermint Mocha Oatmeal looks way more decadent than it is. I made it vegan using coconut milk and coconut yogurt, but you can adjust it to your taste or dietary preferences.
The only really unhealthy part about this oatmeal is the crushed candy canes. And there isn’t even that much crushed candy canes. You can keep it or omit it completely if you want. I just like a pretty dish in the morning.
But if you were looking for a decadent oatmeal idea, I wouldn’t say no to a Coconut Latte Ice Cream Sundae Oatmeal right about now.
But this Peppermint Mocha Oatmeal ticks off all of my New Years resolution boxes for a healthier breakfast: refined sugar free, vegan, gluten free, and a good source of fibre. And it also tastes amazing. That’s probably the most important part.
I think I am going to stock up on candy canes while they are half off now so that I can have a little taste of Christmas all year round. Wanna join me?

Peppermint Mocha Oatmeal
Ingredients
Oatmeal
- 2/3 cup strong brewed coffee
- 1/3 cup milk of choice
- 1/2 cup old fashioned oats
- 2 tsp maple syrup
- 1 Tbsp unsweetened cocoa powder
- 3-4 drops peppermint extract
Toppings
- 1/4 cup coconut yogurt
- 1/2 Tbsp crushed candy canes
Instructions
- Heat the coffee and milk in a small saucepan. Add in the oats and honey. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. Mix in the cocoa powder.
- Remove from heat and mix in the peppermint extract.
- Pour into bowls, and top with yogurt and crushed candy canes.
not so sure about this mix of flavour for oatmeal for coffee yes
