To be honest, I don't know how to feel about it. As a teacher, the school year is so hectic that when you have a summer holiday it seems to fly by. But I am ready to have a consistent schedule and to be doing what I love.

But that also means the return of quick and easy weeknight meals. Starting with this One Pot Cheesy Pasta.

What do you need to make One Pot Cheesy Chicken Pasta?

The beauty about this pasta is that it mostly uses your pantry essentials. All you need is:

  • oil
  • chicken
  • onion
  • seasonings (salt, pepper, garlic powder, Italian seasoning)
  • pasta
  • pasta sauce
  • cheese (mozzarella and Parmesan)

That's it!

One Pot Cheesy Chicken Pasta

Typically when I want a one pot recipe I will go for my One Pot Chili Mac and Cheese recipe. But today I didn't have ground beef on hand, so this recipe was created with what I do have at home.

This recipe is extremely versatile. If you don't have chicken on hand, switch it up with a protein that you do have. Or leave it out completely for a vegetarian option! It will taste amazing any way you cook it.

Ingredients

  • 2 tablespoon avocado oil
  • 3 medium boneless, skinless chicken thighs (breasts work too)
  • 1 medium onion, diced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 16 oz dry pasta (I used rigatoni)
  • 24 oz jar pasta sauce
  • water to fill the empty pasta sauce jar
  • ¾ cup mozzarella cheese, divided
  • ½ cup Parmesan cheese
  • salt and pepper to taste
  • dry parsley for garnish

Instructions

  • In a large saucepan, heat the oil over medium high heat. Add in the chicken and cook until no longer pink, around 5 minutes. Transfer to a plate.
  • In the same saucepan, add in the onion, Italian seasoning and garlic powder, and cook until soft, around 2 minutes. Season with salt and pepper.
  • Mix in the pasta sauce, refill that jar with water and add to the saucepan. Bring to a boil, then reduce the heat to medium heat.
  • Add in the cooked chicken and pasta. Stir then cover and cook for around 10-15 minutes or until the pasta is cooked to your liking. Mix in ¼ cup mozzarella cheese and Parmesan.
  • Mix in the remaining mozzarella cheese and top with dried parsley. Serve immediately.

Notes

If you want some extra heat, this is really good with some red pepper flakes sprinkled in.

    Hi! Do you add 24 oz of water? So for the 24oz of pasta sauce you add the same amount of water? Looks great!
