Simple Vegan Split Pea Soup that is gluten free and super easy to make. Thick and creamy, this is the ultimate comfort food.

I have been on a vegan kick lately.
To be honest, I have always wanted to be vegan. Actually, more vegetarian than vegan only because I love both cheese and baking with eggs. But when I was in high school, I went vegetarian for a year and lost so much weight. You would think that would be a good thing. But I was already known as the skinny kid, so being skinnier was not a look I was going for.
So I started eating meat again so that I could keep up a normal body weight. But now that I am older and I can research what to eat in order to eat healthy and get all the nutrients that I need, I think I might try it out again. Starting with this split pea soup.

I find that for most people I ask, one of the biggest barriers to going vegetarian is the man in their life. It seems like men will always want their meat, and won’t think a meal is complete without it.
So me and John spent the last week eating only vegan food. And frankly, we didn’t miss the meat.
What I was missing was the cheese and the baking, but now that our vegan experiment is over, I can start back on my cookies and cakes and brownies. Just in time for my birthday week!
But this soup is here to stay!

This soup isn’t so great to look at, but it is so good! I always have a bag of split peas in my pantry, which is awesome now that I have this soup recipe in my back pocket! Made with simple ingredients you probably have in your pantry, which include onions, potatoes, vegetable broth and spices.
And it lasts for so freaking long! I love a good soup recipe, but I love it 10x more if I can continue to eat it for dinner throughout the week. That way I can spend less time cooking and more time working on my blog. Or working my regular 9-5.
Yeah.. I do really like to keep myself busy.

Made this soup last night, so I won’t need to worry about what to make for dinner tonight.. then eventually ordering takeout or using UberEats. Just a minute in the microwave, and I have myself a heaping bowl of comfort food. With a side of sourdough. Always.
