For days when you are craving a lot of cookies, but don’t actually want to bake cookies. This is the recipe for you.
I don’t know about you, but I always have a jar of Nutella, Biscoff cookies and some white chocolate chips on hand. So what can you make with all of those ingredients? Well.. I’m making these Nutella Biscoff Sandwiches.
These cookies are perfect for when you need a little Nutella to get you through the day. And I definitely need some Nutella after this busy week I’ve had.
Nutella Biscoff Sandwiches Ingredients
These Nutella Cookie Sandwiches are only made with 3 ingredients! All you need is:
- Biscoff cookies (and biscoff crumbs)
- Nutella
- White chocolate melts
Equipment
- baking sheets
- parchment paper
Tips
Storage: Store these Biscoff Nutella sandwich cookies in an airtight container at room temperature for up to 1 week. You can also store it in the fridge for up to 2 weeks.
Switch up the cookies. Don’t like crunchy cookies? Replace the Biscoff cookies for your favorite chewy cookies.
Replace the Nutella. Don’t like Nutella? Switch it up for cookie butter, peanut butter, or whatever your favorite spread is!
To make the cookie crumbs: I like to either use a rolling pin or a food processor. If you want to use the rolling pin, I would suggest to place the Biscoff cookies in a large ziplock bag, or make a pocket out of plastic wrap to avoid making a mess.

Nutella Biscoff Sandwiches
Ingredients
- 16 Biscoff cookies
- 8 Tbsp Nutella
- 100 g white chocolate melts
- Biscoff crumbs (optional)
Instructions
- Spread 1 Tablespoon of Nutella on a Biscoff cookie. Press another Biscoff cookie on top to create a sandwich. Repeat with the remaining Biscoff cookies. Place on a parchment paper lined baking sheet and put in the freezer.
- Meanwhile, melt the melting chocolate according to package instructions.
- Remove the Biscoff sandwiches from the freezer and dip half in the melted chocolate. Sprinkle some Biscoff crumbs on top, then return to the baking sheet. Place in the fridge until the chocolate has hardened.
- Store in an airtight container in the fridge or freezer.
