Chickpea Salad Wrap

What's better than an awkward Christmas dinner with your family?

Trying to drive during boxing day. I'm not sure what it is, but slightly reduced prices seem to bring out the crazy in people. All I wanted was to go to my boyfriends house to feed his cat, I had no intention of buying anything. Stopping at a stop sign is NOT grounds to continually honk at me.

So after an exhausting day, and a cheesecake-filled, chocolate injected Christmas, I needed this wrap. Chickpeas make for a great post-Christmas lunch.

Chickpea Salad Wrap

What you'll need:

-1 ½ cup cooked chickpeas
-½ cup chopped celery
-3 tablespoons chopped red onion
-1 pickle, chopped
-½ teaspoon mustard
-2 tablespoons fresh lemon juice
-¼ cup sunflower seeds
+salt and pepper to taste
+wraps

Directions:

    1.   Preheat the oven to 325˚F. Toast the sunflower seeds for about 11 minutes.
    2.   Mix everything together in a medium bowl and season with salt and pepper. Stuff into a wrap and enjoy.
