Chicken and Avocado Quesadilla

Chicken and Avocado Quesadilla

I just had my first final, and I am completely exhausted. Maybe it was because it was 2.5 hours long, or maybe because it had so may questions on it, there was no way I could read through it all and answer everything. I mean, come on. We are not machines.

Since I have one this Friday too (oh joy), I decided to make something quick and easy. You know, to contrast that long, hard exam that I just had, and the one that I'm dreading on Friday. But with this easy quesadilla to fuel my brain, I should have no problems!

Chicken and Avocado Quesadilla
printable recipe

What you'll need:

-1/4 avocado
-1/2 tomato, cubed
-6 slices of cheese
-1/3 cup cooked chicken, cubed
-1 large flour tortilla (I used spinach)

Directions:

    1.   Place the tortilla on the skillet on medium heat and lay the avocado, tomato, cheese and cooked chicken along half of the tortilla. Fold the tortilla in half (with the filling on the bottom) and flip after around 3-4 minutes. Remove from heat when the other side is golden.
