Bake the pie crust in the preheated oven for 12-15 minutes, or until golden brown. Remove and allow to cool.
Place half of the strawberries into the cooled, baked pie crust.
Cut the remaining strawberries into quarters. Add the quartered strawberries and sugar into a medium saucepan, and cook over medium heat. Once the sugar has melted, bring to a boil.
Meanwhile, in a small bowl, mix together the cornstarch and water. Pour into the boiling strawberry mixture and bring to a simmer. Simmer for around 1 minute.
Pour the hot strawberry mixture into the pie. Refrigerate for at least 3 hours before cutting into slices.
