Line a 9x9 inch baking pan with aluminum foil. Set aside.
In a medium microwave safe bowl, microwave the chocolate chips and 1 teaspoon coconut oil in 30 second intervals, mixing until smooth. Mix in the peppermint extract.
Pour the chocolate mixture into the prepared baking pan. Place in the fridge to harden, around 30 minutes.
In a medium microwave safe bowl, microwave the white chocolate chips and 1 teaspoon coconut oil in 30 second intervals, mixing until smooth.
Pour the white chocolate on top of the hardened chocolate layer, and spread out evenly with a silicone or offset spatula. Immediately sprinkle the crushed candy canes on top. Refrigerate until hardened, around 30 minutes. Cut into squares and enjoy!
