Spread a ½ Tablespoon of Nutella onto a Ritz cracker. Sandwich another Ritz cracker on top. Repeat with the remaining crackers. Place in the freezer while preparing the next step.
In a small microwave safe bowl, microwave the chocolate chips and coconut oil in 30 second intervals, mixing until smooth.
Remove the baking sheet from the freezer. Dip the Ritz sandwiches in the melted chocolate, making sure it is completely coated. Return to the baking sheet. Repeat with the remaining sandwiches.
Place in the fridge until the chocolate is hardened.
Notes
To store these chocolate covered Ritz, place in an airtight container at room temperature for up to 1 week. If your kitchen is warm, place them in the fridge so that the chocolate doesn't soften.
If you add toppings to these chocolate sandwiches, make sure to sprinkle them on right after you dip the Nutella sandwiches in the melted chocolate. If the chocolate hardens, the toppings will not stick to the chocolate.
Omit the coconut oil if you are using the double boiler method to melt chocolate.
Chill the Nutella sandwiches before dipping into the melted chocolate. While this is optional, I have found that it's easier to dip since the sandwiches are more sturdy and stick together better.
Use a fork to dip the Nutella sandwiches into the melted chocolate to make sure you remove excess melted chocolate. You can also use chocolate dipping tools to make this easier.
