Oatmeal Raisin Chocolate Chip Cookies

Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 cup salted butter, softened
  • 2/3 cup brown sugar, packed
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 1/2 cups rolled oats
  • 3/4 cup raisins
  • 3/4 cup chocolate chips

Instructions

  • In a large mixing bowl, whisk together the flours, baking soda and cinnamon until fully combined. Set aside.
  • In a separate bowl, beat the butter until creamy. Gradually add the brown sugar, and cream together until light ant fluffy.
  • Add in the egg and vanilla and mix until smooth.
  • Slowly mix in the dry ingredients until fully incorporated.
  • Fold in oats, raisins and chocolate chips.
  • Cover the top of the bowl with saran wrap and place in the refrigerator for at least 2 hours or overnight.
  • Preheat the oven to 350˚F.
  • Line baking sheet with parchment paper or silicone baking mat. 
  • Scoop the cookie dough onto the sheet.
  • Bake in the preheated oven for 10-15 minutes. Let them cool on the sheet for 5 minutes, then transfer onto a wire rack to cool completely.
