Oatmeal Raisin Chocolate Chip Cookies

Ingredients

all-purpose flour
1/4
cup
whole wheat flour
1/2
tsp
baking soda
1/2
tsp
ground cinnamon
1/2
cup
salted butter,
softened

cup
brown sugar,
packed
1
large
egg
1/2
tsp
vanilla extract
1 1/2
cups
rolled oats
3/4
cup
raisins
3/4
cup
chocolate chips
Instructions
In a large mixing bowl, whisk together the flours, baking soda and cinnamon until fully combined. Set aside.
In a separate bowl, beat the butter until creamy. Gradually add the brown sugar, and cream together until light ant fluffy.
Add in the egg and vanilla and mix until smooth.
Slowly mix in the dry ingredients until fully incorporated.
Fold in oats, raisins and chocolate chips.
Cover the top of the bowl with saran wrap and place in the refrigerator for at least 2 hours or overnight.
Preheat the oven to 350˚F.
Line baking sheet with parchment paper or silicone baking mat.
Scoop the cookie dough onto the sheet.
Bake in the preheated oven for 10-15 minutes. Let them cool on the sheet for 5 minutes, then transfer onto a wire rack to cool completely.
