- 2 cups almond flour
- 1/2 tsp baking soda
- 3 large eggs
- 1/4 cup maple syrup
- 2 Tbsp coconut oil, melted
- 1 tsp apple cider vinegar
- 1 tsp vanilla extract
- 1/2 cup dairy free chocolate chips
Preheat the oven to 325℉. Lightly spray a muffin pan with cooking spray and set aside.
In a medium bowl, mix together the eggs, maple syrup, coconut oil, apple cider vinegar and vanilla extract.
Slowly mix the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips.
Divide the batter between the 9 prepared cavities in the muffin pan, and bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
