
I am ecstatic. I am finally done my exams! Now I can relax…for the two weeks I have before it’s back to summer school.
I think that I’m one of those people who get really nervous and jittery when I don’t have something to do. Last summer I was teaching myself Russian because I couldn’t stand not learning anything. Sadly, I had no time to continue during the school year, so I forgot most of it.

But for these first few days, I just want to relax.
And what better way to relax than with a refreshing smoothie in your hand? This Soy Strawberry Lemon Smoothie takes practically no effort to put together, so it’s perfect for this relaxing, lazy day.

Plus, it’s so easy to make! All you need is:
- frozen strawberries
- lemon
- soy milk
That’s it!!

Whenever I have strawberries handy, I will either make this recipe or my Strawberry Banana Smoothie. But lately, I haven’t been able to keep bananas in the house for that long without John eating them. I swear, he eats bananas all day long without getting sick of them.
Which means it is this smoothie most days. Not that I am complaining. I could drink as many of theses smoothies as John can eat bananas.

Soy Strawberry Lemon Smoothie
Ingredients
- 1 cup strawberries, frozen
- 2 Tbsp freshly squeezed lemon juice
- 1 cup soy milk
Instructions
- Combine all ingredients in a blender, and puree until smooth.
Any day is a special day if you start it with a strawberry lemon smoothie like this. Healthy and delicious – perfect!
