Whole Wheat Banana and Date Muffins

Ingredients

ground cinnamon

teaspoon
salt

bananas,
ripe

eggs

coconut oil,
melted

cup
maple syrup

teaspoon
vanilla extract

chocolate chips
coarse sugar
Instructions
Preheat the oven to 350˚F. Line a muffin pan with paper liners and set aside.
In a small bowl, soak the dates in water for at least 5 minutes.
Meanwhile, in a medium bowl, mix together the flours, wheat bran, oats, baking powder, baking soda, cinnamon and salt. Set aside.
Place the bananas, eggs, coconut oil, maple syrup, vanilla and soaked dates in a food processor and pulse until smooth.
Add the wet ingredients to the dry ingredients, and mix until just combined. Fold in the chocolate chips.
Divide evenly in the prepared muffin pan and top with coarse sugar and additional oats, if desired.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
