Vegan Chocolate, Peanut Butter and Avocado Pie

Ingredients

  • 1 gluten free pie crust
  • 3 large avocados, peeled and pitted
  • 3/4 cup pure maple syrup
  • 1/2 cup unsweetened cocoa powder
  • 4 Tbsp natural peanut butter
  • 2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  • In a food processor, blend together all of the ingredients (except the pie crust!) until smooth.
  • Pour the mixture into the pie crust, and place in the freezer to harden. 

Notes

Can be kept in the fridge, but I personally prefer a harder and more ice cream like texture the freezer provides for the pie.
