Preheat the oven to 375˚F. Spray a muffin pan with cooking spray and set aside.
In a medium bowl, mix together the flour, baking powder, baking soda and salt. Set aside.
In a separate bowl, mix together the yogurt, applesauce, butter, eggs and vanilla.
Slowly mix in the dry ingredients into the wet ingredients until just combined.
Divide the batter into the prepared muffin pan and bake in the preheated oven for 16-18 minutes, or until a toothpick inserted in the centre comes out clean.
Allow to cool for 5 minutes int he muffin pan before transferring to wire racks to cool completely.
