Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup plain yogurt
  • 1/3 cup unsweetened applesauce
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 2 tsp vanilla extract

Instructions

  • Preheat the oven to 375˚F. Spray a muffin pan with cooking spray and set aside.
  • In a medium bowl, mix together the flour, baking powder, baking soda and salt. Set aside.
  • In a separate bowl, mix together the yogurt, applesauce, butter, eggs and vanilla.
  • Slowly mix in the dry ingredients into the wet ingredients until just combined.
  • Divide the batter into the prepared muffin pan and bake in the preheated oven for 16-18 minutes, or until a toothpick inserted in the centre comes out clean.
  • Allow to cool for 5 minutes int he muffin pan before transferring to wire racks to cool completely.
