Preheat the oven to 400°F. Arrange the vegetables on one side of a baking sheet and the pork chop on the other side.
In a small bowl, mix together the salt, pepper, garlic powder and cayenne. Drizzle the olive oil over the vegetables and pork chops. Sprinkle with the seasoning mix.
Bake in the preheated oven for 15 minutes. Flip the vegetables and bake for an additional 15 minutes.
