Prep Time: 5 minutes
Cook Time: 40 minutes
Total Time: 45 minutes

Ingredients

  • 1/2 cup salsa
  • 1/2 tsp cumin
  • 1/2 cup sour cream
  • 1/2 cup oil
  • 2 large eggs
  • 1 Tbsp granulated sugar
  • 1 3/4 cup all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp salt

Instructions

  • Preheat the oven to 350°F. Lightly spray a loaf pan with cooking spray and set aside.
  • In a medium bowl, whisk together the salsa, cumin, sour cream, avocado oil and eggs.
  • In a seperate bowl, mix together the sugar, flour, baking powder and salt. Slowly add to the wet ingredients and mix until fully combined.
  • Pour into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted comes out clean.
  • Allow the bread to cool completely in the pan before removing and cutting.

Notes

I like to use avocado oil, but any neutral oil works in this recipe.
