- 2 cups rolled oats
- 1/4 cup brown sugar
- 1/2 cup pumpkin seeds
- 1 tsp pumpkin spice
- 1/2 tsp coarse salt
- 2 Tbsp honey
- 2 1/2 Tbsp coconut oil
- 1 1/2 tsp vanilla extract
Preheat the oven to 300°F. Line a baking sheet with parchment paper or a silpat baking mat.
In a medium bowl, mix together the oats, sugar, pumpkin seeds, pumpkin spice and salt.
In a small saucepan on medium heat, melt the honey and coconut oil. Remove from heat and stir in vanilla.
Pour the honey mixture on the oat mixture, and stir until fully combined.
Spread the mixture over the prepared baking sheet, and place in the oven for 20 minutes, or until the granola is slightly golden.
