Ingredients

  • 2 cups rolled oats
  • 1/4 cup brown sugar
  • 1/2 cup pumpkin seeds
  • 1 tsp pumpkin spice
  • 1/2 tsp coarse salt
  • 2 Tbsp honey
  • 2 1/2 Tbsp coconut oil
  • 1 1/2 tsp vanilla extract

Instructions

  • Preheat the oven to 300°F. Line a baking sheet with parchment paper or a silpat baking mat.
  • In a medium bowl, mix together the oats, sugar, pumpkin seeds, pumpkin spice and salt. 
  • In a small saucepan on medium heat, melt the honey and coconut oil. Remove from heat and stir in vanilla.
  • Pour the honey mixture on the oat mixture, and stir until fully combined.
  • Spread the mixture over the prepared baking sheet, and place in the oven for 20 minutes, or until the granola is slightly golden.
