- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/3 cup oil
- 1 tsp vanilla extract
- 1/3 cup granulated sugar
- 1 large egg
- 1 cup peppermint creamer
- 1/4 cup crushed candy canes
Preheat the oven to 375℉. Line a muffin pan with paper liners and set aside.
In a medium bowl, mix together the flour, cocoa powder, baking powder and salt.
In a large bowl, mix together the oil, vanilla extract, sugar, egg and creamer until fully combined.
Slowly mix the dry ingredients into the wet ingredients until just combined.
Divide the batter evenly between the prepared muffin cups. Top each muffin with crushed candy canes and bake in the preheated oven for 16 minutes, or until a toothpick inserted comes out clean.
