Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/3 cup oil
  • 1 tsp vanilla extract
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 cup peppermint creamer
  • 1/4 cup crushed candy canes

Instructions

  • Preheat the oven to 375℉. Line a muffin pan with paper liners and set aside.
  • In a medium bowl, mix together the flour, cocoa powder, baking powder and salt.
  • In a large bowl, mix together the oil, vanilla extract, sugar, egg and creamer until fully combined.
  • Slowly mix the dry ingredients into the wet ingredients until just combined.
  • Divide the batter evenly between the prepared muffin cups. Top each muffin with crushed candy canes and bake in the preheated oven for 16 minutes, or until a toothpick inserted comes out clean.
