In a large microwave safe mug, combine the cocoa powder, flour, salt, sugar and baking powder until fully combined.
Add in the coconut oil, milk and vanilla until fully incorporated. Microwave for 30 seconds and see if it’s done. If not, microwave for 10 second intervals until the top is set.
Notes
Mug size matters. Make sure you use a microwave safe mug that is at least 12 oz (350 ml) to prevent the mug cake from overflowing while cooking.Do not overcook. Start checking the cake at 30 seconds. Stop cooking as soon as the top looks set. If you overcook the cake, it will turn out rubbery or dry.Milk substitutions: You can replace the milk with any dairy or non-dairy milk you like. For a vegan mug cake, replace the milk with your favorite plant-based option.Serve it warm, right out of the microwave! If you want it extra decadent, top with chocolate chips, a scoop of vanilla ice cream or some whipped cream. To prevent the mug cake from overflowing, make sure to watch it in the microwave. If the cake starts to overflow, pause the microwave then resume once the cake has gone down in size.
