Mozzarella, Egg and Tomato English Muffin

Ingredients

  • 1 large egg
  • 1 english muffin
  • 2 slices tomatoes
  • 1/4 cup mozzarella
  • salt and pepper to taste

Instructions

  • Place the egg in a small saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Let the egg stand in the hot water for around 10 minutes.
  • Remove from hot water and place in a bowl of cold water.
  • Toast the english muffin. Peel the egg ad cut it in two. Assemble english muffin, and toast in the toaster oven until the cheese is melted.
