Ingredients

  • 1/2 cup quick oats
  • 1/4 cup unflavored protein powder
  • 1/4 cup maple syrup
  • 3 Tbsp peanut butter
  • 5 dates cut in half
  • 1/4 cup vegan chocolate chips
  • 1/2 tsp coconut oil
  • 3 Tbsp roasted peanuts

Instructions

  • In a small bowl, mix together the oats, protein powder, maple syrup, and peanut butter until smooth.
  • Scoop 1 Tablespoon of the mixture into 10 cavities of a mini muffin pan.
  • Place half a date on top.
  • In a small microwave safe bowl, melt the chocolate and coconut oil in the microwave in 30 second intervals, mixing until smooth.
  • Divide the chocolate evenly on top of the dates. Top with peanuts.
