Ingredients

uncooked quinoa

reduced sodium chicken broth
(or vegetable broth)

tsp
ground cumin
1/2
tsp
salt
1
tsp
unsweetened cocoa powder
1
cup
frozen corn
2
medium
jalapeno peppers,
chopped
Instructions
In a medium saucepan, mix together the quinoa, chicken broth, cumin, salt, cocoa powder and frozen corn.
Bring the quinoa to a boil, then cover and simmer for 15 minutes or until the liquid is absorbed.
Remove from heat and mix in the jalapeno peppers.
