Gooey Cinnamon Squares
These gooey cinnamon squares are gooey on the inside, with a nice sturdy cookie crust. The cinnamon sugar sprinkled on top makes this recipe a winner!

Cookie Base
- 1/2 cup salted butter, melted
- 1 1/2 cups all-purpose flour
- 1 tsp cream of tartar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup granulated sugar
- 1/4 cup milk of choice
Gooey Layer
- 1/4 cup corn syrup
- 1/4 cup milk of choice
- 1 Tbsp vanilla extract
- 1/2 cup salted butter, softened
- 18 Tbsp granulated sugar
- 1/4 tsp salt
- 1 large egg
- 1 1/4 cup all-purpose flour
Topping
- 2 Tbsp granulated sugar
- 1 1/2 tsp ground cinnamon
Preheat the oven to 350˚F. Line a 9×13 inch casserole dish with parchment paper. Set aside.
In a large bowl, mix together the cookie base ingredients until fully combined. Press the cookie base in the casserole dish with a spatula.
In a large bowl (you can reuse the same one), mix together the gooey layer ingredients until fully combined. Pour onto the cookie layer.
In a small bowl, mix together the topping ingredients. Sprinkle over top the batter.
Place in the preheated oven for 30-35 minutes. Allow to cool, then cut into squares.
