Line a cookie sheet with parchment paper. Set aside.
Bake the cake according to package instructions. Allow to cool completely.
Using a stand mixer, mix together the cooled cake and the frosting until fully combined. Set aside.
Place the white chocolate chips and the coconut oil in a microwave safe bowl and microwave in 30 second intervals, mixing until smooth.
Form the cake into balls using your hands. Dip them in the melted chocolate and place on the prepared cookie. Sprinkle with sprinkles.
Place the cookie sheet in the fridge (or freezer) until the chocolate is hardened.
Notes
Allowing it to cool in the freezer results in a harder cake ball, and it will have to be kept frozen to avoid condensation forming. Allowing them to cool in the fridge will result in a softer cake ball that can be stored at either room temperature or in the fridge.
