Insert wooden sticks into a mini ice cream bar silicone mold. Place the mold on a small tray.
Pour the melted ice cream into the molds. Place in the freezer to harden overnight.
When the ice cream has hardened, add the chocolate chips and coconut oil into a small microwave safe bowl. Microwave in 30 second intervals, mixing after each interval until smooth. Allow to cool for around 5 minutes.
Line a baking sheet with parchment paper.
Remove the ice cream bars from the silicone molds and quickly dip the bars one at a time into the melted chocolate.
Place the ice cream bars on the prepared baking sheet and immediately place into the freezer until the chocolate has hardened.
Store in the freezer until ready to serve.
