In a microwave safe bowl, microwave the chocolate chips and 1 Tbsp coconut oil in 30 second intervals, mixing until smooth.
Spread 3/4 of the melted chocolate over the prepared baking sheet.
In a small microwave safe bowl, microwave the white chocolate chips and 1/2 Tbsp coconut oil in 30 second intervals, mixing until smooth.
Dollop the melted white chocolate over the melted chocolate. Dollop the remainder of the semi-sweet chocolate on top.
Sprinkle the pretzels and mini eggs on top of the chocolate. Place in the fridge to harden.
Once the chocolate is hardened, cut the bark into pieces.
