- 1/2 cup salted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 1/2 cup all-purpose flour
- 1/2 cup sweetened shredded coconut
- 1/2 cup chocolate chips
- 1 cup corn flakes, lightly crushed
Preheat the oven to 350˚F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
In a medium bowl, cream together the butter and sugars. Add in the egg and vanilla and mix until fully incorporated.
Add in the salt, baking soda, baking powder, and flour and mix until just combined. Fold in the coconut, chocolate chips and corn flakes.
Drop small spoonfuls on a baking sheet, and bake in the preheated oven for 8-10 minutes.
