Preheat the oven to 350˚F.
In a medium bowl, combine the flours and baking soda.
In a separate bowl, beat together the butter, sugars and vanilla until light and fluffy. Add the eggs and mix well.
Slowly add the dry ingredients to the wet ingredients until fully combined. Fold in the chocolate chips and cashews.
Drop the cookie dough onto ungreased baking sheets and bake for 9-11 minutes, or until the edges are golden brown. Remove from the oven and allow to cool on baking sheets for around 2 minutes, then transfer to wire racks to cool completely.
