1lb (450g)chestnuts.cooked, peeled and very finely chopped
1largeonion,finely chopped
liverfrom 1 chicken, chopped small
4oz (110g)bacon,finely chopped
2tablespoonbutter
4tablespoonfresh parsley,chopped
1teaspoondried thyme
¼teaspoonground nutmeg
8oz (225g)sausage,chopped small
salt and pepperto taste
8slicesbacon
Instructions
Preheat the oven to 350˚F.
In a large skillet, heat the oil on medium heat. Fry the onion, 4 oz bacon and chopped liver for around 10 minutes, or until the onions are transparent.
In a large bowl, mix together all the ingredients. Line a small casserole dish with the the 8 slices of bacon, and pour the contents of bowl on top. Bake for 40-45 minutes, or until cooked.
