- 1 3/4 cups vegetable broth
- 1 cup quinoa
- 1/2 cup onion, diced
- 1 clove garlic, minced
- 2 cups broccoli, chopped
- 1 cup cheddar cheese, shredded
- salt and pepper to taste
Heat the vegetable broth, quinoa, onion and garlic on medium heat and bring to a boil. Once boiling, reduce the heat to medium low, cover, and let simmer for 10 minutes. Place the broccoli in the pan and allow to simmer for another 5 minutes, or until the liquid is completely absorbed.
Remove from heat and stir in the cheese. Cover and set aside to let the cheese melt, around 2-3 minutes. Season with salt and pepper.
