Ingredients

  • 1/2 cup dates
  • 1 cup boiling water
  • 1 1/3 cup whole wheat flour
  • 2/3 cup all-purpose flour
  • 1/4 cup wheat bran
  • 1/4 cup old fashioned oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 medium bananas, ripe
  • 2 large eggs
  • 1/4 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips
  • coarse sugar

Instructions

  • Preheat the oven to 350˚F. Line a muffin pan with paper liners and set aside.
  • In a small bowl, soak the dates in water for at least 5 minutes.
  • Meanwhile, in a medium bowl, mix together the flours, wheat bran, oats, baking powder, baking soda, cinnamon and salt. Set aside.
  • Place the bananas, eggs, coconut oil, maple syrup, vanilla and soaked dates in a food processor and pulse until smooth.
  • Add the wet ingredients to the dry ingredients, and mix until just combined. Fold in the chocolate chips.
  • Divide evenly in the prepared muffin pan and top with coarse sugar and additional oats, if desired.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
