Coconut Cream Pie Oatmeal recipe using canned coconut milk. This breakfast is guaranteed to keep you full until lunch, and it is so quick and easy to make.

Ingredients

  • 1 cup coconut milk
  • 1/2 cup old fashioned oats
  • 1 Tbsp chia seeds
  • 1/4 cup Greek Yogurt (plain or coconut)
  • 1 Tbsp coconut chips

Instructions

  • Heat the milk in a small saucepan on medium heat. Add in the oats and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. 
  • When thickened, pour into a bowl. Top with yogurt and coconut chips.
