Whole Wheat Banana Applesauce Pancakes

Healthy Whole Wheat Banana Applesauce Pancakes made with chia seeds. This recipe is a very filling breakfast idea, and a great way to use up 2 ripe bananas.

Ingredients

  • 1 large egg
  • 1 cup milk
  • 1/2 cup applesauce
  • 1 tsp vanilla extract
  • 3 Tbsp chia seeds
  • 2 Tbsp maple syrup
  • 2 Tbsp salted butter, melted
  • 1 1/2 cups whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 large bananas, mashed

Instructions

  • In a small bowl, mix together the egg, milk, applesauce, vanilla, chia seeds and maple syrup. Set aside for around 5 minutes to allow the chia seeds to absorb some of the liquid.
  • In a medium bowl, mix together the flour, baking powder, salt and cinnamon.
  • After 5 minutes are over, mix the wet ingredients into the dry ingredients until fully incorporated. Mix in the bananas. 
  • Heat some oil or butter in a skillet on medium heat. Scoop 1/4 cup of batter onto the hot skillet and flatten with a rubber spatula to ensure they cook evenly. Cook until bubbles appear on the top. Flip the pancake over, and cook the other side for an additional minute, or until the side is golden brown.
  • Repeat with the remaining batter.
