Cheese and Broccoli Quinoa Casserole

- 1 1/2 cups quinoa
- 3 cups water
- 1 Tbsp ghee or oil
- 3/4 cups broccoli
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 large eggs
- 1 cup milk
- 1 1/2 cups cheddar cheese, grated
- 1/2 cup Parmesan cheese finely grated
Rinse and dry quinoa. Place the quinoa and the water in a medium saucepan and bring to a boil on medium high heat. Reduce to a simmer, then cover and cook for around 15 minutes, or until all of the water is absorbed. Remove from heat and set aside.
In a small skillet, heat up the oil. When the oil is hot, fry the onions and broccoli until the onions are golden. Remove from heat and set aside.
Preheat the oven to 350˚F. Coat an 11x7 inch baking dish with cooking spray.
In a large bowl, beat together the eggs and milk. Fold in the quinoa and cheese until fully combined.
Pour the quinoa mixture into your prepared baking dish and sprinkle with Parmesan cheese. Bake for 30-35 minutes.
