Cheese and Broccoli Quinoa Casserole

Ingredients

  • 1 1/2 cups quinoa
  • 3 cups water
  • 1 Tbsp ghee or oil
  • 3/4 cups broccoli
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 cup milk
  • 1 1/2 cups cheddar cheese, grated
  • 1/2 cup Parmesan cheese finely grated

Instructions

  • Rinse and dry quinoa. Place the quinoa and the water in a medium saucepan and bring to a boil on medium high heat. Reduce to a simmer, then cover and cook for around 15 minutes, or until all of the water is absorbed. Remove from heat and set aside.
  • In a small skillet, heat up the oil. When the oil is hot, fry the onions and broccoli until the onions are golden. Remove from heat and set aside.
  • Preheat the oven to 350˚F. Coat an 11x7 inch baking dish with cooking spray.
  • In a large bowl, beat together the eggs and milk. Fold in the quinoa and cheese until fully combined.
  • Pour the quinoa mixture into your prepared baking dish and sprinkle with Parmesan cheese. Bake for 30-35 minutes.
