Peppermint Oreo Truffle Cups
Peppermint Oreo Truffle Cups recipe made with only 4 ingredients. These are so easy to make, they are a great dessert or snack idea for Christmas or St. Patrick's Day.

- 17 peppermint oreos
- 4 oz cream cheese, softened
- 10 oz chocolate chips
- 1 tsp coconut oil
Line a mini muffin pan with paper liners and set aside.
Pulse the oreos in a food processor until they look like fine crumbs, Add in cream and pulse until smooth.
Form 24 coins with the oreo mixture. Make sure they can fit in your mini muffin pan/ Place on a baking sheet lined with parchment paper and freeze.
Meanwhile, place the chocolate chips and coconut oil in a microwave safe bowl, and microwave in 30 second intervals, mixing until smooth.
Divide half of the chocolate into the prepared mini muffin pan. Place the oreo coins on top, then top with the remaining chocolate. Freeze until hardened.
