Ingredients
1Tbspolive oil
1largeyellow onion,diced
2clovesgarlic,minced
1/2tspdried oregano
1tspsalt
1tspground black pepper
1bay leaf
5mediumred potatoes,unpeeled and cut into cubes
1lbdried green split peas,rinsed
8cupsvegetable broth
Instructions
In a large saucepan, heat the olive oil. Add in the onion, garlic, oregano, salt and pepper. Cook until the onions are translucent, around 5-10 minutes.
Add in the bay leaf, potatoes, split peas and vegetable broth, and bring to a boil. Reduce heat, and allow to simmer uncovered for around 1 hour, stirring occasionally.
Remove bay leaf and spoon into bowls.
Notes
When reheating, add a couple of tablespoons of water, as soup will dry out when cool.
