Ingredients

  • 1 Tbsp olive oil
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 bay leaf
  • 5 medium red potatoes, unpeeled and cut into cubes
  • 1 lb dried green split peas, rinsed
  • 8 cups vegetable broth

Instructions

  • In a large saucepan, heat the olive oil. Add in the onion, garlic, oregano, salt and pepper. Cook until the onions are translucent, around 5-10 minutes.
  • Add in the bay leaf, potatoes, split peas and vegetable broth, and bring to a boil. Reduce heat, and allow to simmer uncovered for around 1 hour, stirring occasionally.
  • Remove bay leaf and spoon into bowls.

Notes

When reheating, add a couple of tablespoons of water, as soup will dry out when cool.
