Peppermint Mocha Oatmeal

Oatmeal
- 2/3 cup strong brewed coffee
- 1/3 cup milk of choice
- 1/2 cup old fashioned oats
- 2 tsp maple syrup
- 1 Tbsp unsweetened cocoa powder
- 3-4 drops peppermint extract
Toppings
- 1/4 cup coconut yogurt
- 1/2 Tbsp crushed candy canes
Heat the coffee and milk in a small saucepan. Add in the oats and honey. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. Mix in the cocoa powder.
Remove from heat and mix in the peppermint extract.
Pour into bowls, and top with yogurt and crushed candy canes.
